Apricot Jam: Microwave

Chop and quarter 6 very full cups of ripe Apricots, remove any black marks from the skin as it looks terrible in a jar. Don’t use hard or un ripe apricots as these have little or no flavour.

Place in a microwave bowl and cook for 20 mins or so until they cook down to a thick pulp. Do not add any water as the ripe apricots stew down beautifully.

Add 4 cups of white sugar and mix until dissolved.

Cook for a further 15-20 mins until thick and glossy.

Sit for 5 mins before pouring into hot jars and seal.
