Sweet corn fritters - I’ll be eatin’ corn fritters from now on!

A Kiwi classic, sweet corn fritters are a perfect side dish during the barbecue season.

Versatile and simple, they can be enjoyed with a range of toppings including cream cheese, sweet chilli sauce, Dijon mustard or even a dash of maple syrup. Also extra fillings can be added for flavour.

Sweet Corn Fritters

You will need:

300-400gm sweet corn (or a tin of creamed corn)
½ cup milk (if not using creamed corn)
1 large egg
½ tsp paprika or black pepper
½ tsp salt
1 tsp baking powder
¾ cup flour
Cooking oil
Spring onion/capsicum
Toppings (to taste)

To prepare:

Beat the egg and mix in diced, spring onion or capsicum and sweet corn (and milk if not using creamed corn). Combine dry ingredients and mix together to form a batter.

Lightly coat a frying pan with oil and heat. Drop batter one tablespoon at a time into the pan and spread to form a pancake shape.

Cook fritters until golden brown on each side then set aside on paper towel to drain.

Top with a little of what you fancy, serve and enjoy!
