Green, green toms at home

greengreentoms-2.jpgTry consuming those un-ripened toms and you could end up feeling a little ‘green’ around the gills; however, thanks to a little culinary magic, you can turn garden waste into something your family will truly... relish!

Green Tomato Relish

You will need:

3kg green tomatoes (ripe tomatoes can also be used)
1.5kg apples
1.5kg onions
1.5kg sugar
3 dessertspoons curry powder
3 tbsp mustard powder
4 tbsp flour
2 tsp ground pepper
2 litres of vinegar with extra for mixing
2 tbsp salt

To prepare:


Slice tomatoes, onions and apples and sprinkle with salt. Leave overnight. Strain in the morning.

Add vinegar and sugar and boil for half an hour. When soft, add other dry ingredients mixed with the flour in a small amount of vinegar. Boil until thick then pour into jars and seal.
