Balls ‘o fun!

ballsofun-cheesyballs2.jpgHere’s a simple recipe that’s become a favourite around our way, so much so that, when there’s a hearty party in need of a few cheesy grins, there’s only one way to begin!

Toni’s famous cheesy balls

You will need:

125gm cream cheese
1 cup grated tasty cheese
1 cup grated mild cheese
1 small onion (finely diced)
1 tbsp gherkin or tomato relish
Mixed herbs, seeds & spices (any variety)

To prepare:

Mix all ingredients (except herbs) together thoroughly and roll into balls (roughly the size of tennis balls).

Roll balls in mixed herbs & spices. A variety of dried herbs, seeds and spices can be used depending on seasonal availability. Varieties pictured include: paprika, Moroccan seasoning, lemon pepper, poppy seed, mixed herbs and parsley.

Chill overnight. Serve with crackers and... enjoy!

While the cheese mixture gives this snack its substance, the flavour, provided by the onion and relish, not to mention the variety of coatings, brings this dish to life.

The fresher the relish, the better. Click here for a wonderful recipe for Green Tomato Relish provided earlier in the year by readers Tom and Wendy Niblett.
