A pizza paradise!

wildruby-cranberrychickenpizza.jpgNow, in my opinion, anyone who says that the moon can hit your eye like a big pizza pie has seriously come... direct from the bar! That said, this little slice certainly sets my heart a-flutter and has me asking for... a-more!

Cranberry & Chicken Pizza

You will need:

Fresh cranberries
Cranberry and Ginger / Cranberry and Onion chutney
1-2 onions
½ a spring onion
Pineapple pieces
½ a smoked chicken breast
Mozzarella cheese
Sweet basil
Black pepper
450 grams of flour

To prepare:

Prepare pizza dough in a bread maker or by hand
Allow dough to rise a warm place and roll to fit an oven tray
Spread chutney liberally over the base
Sauté onions and spring onions in butter until soft
Cool onions and spread over pizza base
Place shredded smoked chicken and pineapple pieces on base
Add mozzarella cheese
Top with fresh cranberries
Sprinkle with sweet basil and black pepper
Cook at 200 degrees C for approximately 20 minutes
Serve!

Although it’s probably a little late in the game to mention this, I substituted smoked chicken for left-over Christmas turkey; and the result? Finger-licking good!
